Our version of Butter Chicken is perfectly balanced with aromatic spices, is creamy, rich and a perfect comfort meal.
Its not too spicy so the whole family can enjoy, if you like that extra heat just top with some finely sliced Chilli to serve.
You can mix it up and use any cut of chicken you like, slowly simmering it away in the sauce makes for lovely tender and marinated Chicken.

Butter Chicken

Serves 4
Prep time 10 minutes
Cook time 55 minutes
Total time 1 hours, 5 minutes


  • 2 Medium Onions
  • 3 Cloves Garlic
  • 1 Tsp Minced Ginger
  • 1 Carrot
  • 1 Tblsp Garam Masala
  • 2 Tsp Mild Paprika
  • 1/2 Tsp Ground Cardomom
  • 1 Tsp Ground Coriander
  • 1 Tsp Ground Cumin
  • 1 Tsp Ground Tumeric
  • 1 Pinch Cayenne Pepper
  • 3/4 Tsp Himalayan Salt
  • 3 Tblsp Tomato Paste
  • 400 Mls Coconut Milk
  • 2 Tblsp Coconut Oil
  • 3/4 Cup Water
  • 500 Grams Chicken Breast or Thigh


1. Measure out all dry Spices into a small bowl and set aside.
2. Finely slice Onions and Carrot and set aside with portion of Ginger.
3. Remove Bones if any and cut Chicken into 3-4cm pieces, place in a bowl and set aside.
4. Heat a large pan on medium and add Onion, Carrot and Ginger; allow to sweat down for 5-8mins then add Water and continue to cook down for a further 5mins or until Water has reduced.
5. Add in prepared Spice Mix and Salt and cook out for around 2mins or until Spices are fragrant.
6. Add Tomato Paste and cook out around 1min before adding Coconut Milk.
7. Allow to come to heat and simmer for 5mins.
8. Using a stick mixer, blitz sauce until it becomes fine and there are no remaining lumps.
9. Turn heat to low, add Chicken and cook for around 20-25mins until Chicken is cooked through and sauce has thickened and reduced slightly.
