A new take on an old recipe! Let’s face it, it’s difficult to take an old classic recipe and make it your own but this Chocolate Coconut Slice is delicious and sometimes we are looking for low allergen or something with a bit less sugar!

This delicious slice still makes me reminisce about my childhood, it has the same chewy texture and sweetness about it. It is still just as easy to make with the kids hands in there helping and it’s a great little gem to pack into the school lunch box.

A delicious Chocolate Coconut Slice that will spark childhood memories. This slice is low in allergies and a gem to pack into lunch boxes.

Ingredients

  • 1 1/2 cup Spelt Flour
  • 3/4 cups Shredded Coconut
  • 2 tablespoons Cacao Powder
  • 2 teaspoons Baking Powder
  • 3/4 cups Coconut Sugar
  • 2 tablespoons Pure Maple Syrup
  • 1 cup Butter (Dairy Free alternatives work well)
  • 200g Block Dark Chocolate (i have used a Dairy Free Dark Chocolate)
  • 5 pieces Wheat Biscuits (Vita Brits - crushed)

Directions

Method
1. In a large bowl crush Wheat Biscuits then add Spelt Flour, Shredded Coconut, Cacao Powder, Baking Powder and Coconut Sugar. Mix well with a wooden spoon or hands.
2. In a small pot add Maple Syrup and Butter then heat on high until boiling; remove from heat.
3. Add the hot wet ingredients into the large bowl of dry ingredients and combine well with wooden spoon. Once mixed well then use your hands to ensure all dry ingredients have been coated with wet mix.
4. Line a 20x30 slice tray with baking paper and scoop mix into tin pressing firmly all the way to the edges.
5. Bake in a pre-heated 170° oven for 15-17 minutes until firm.
6. Allow to cool completely.
7. Add a cup of water to a clean small pot and place a small bowl over (creating a double boiler). Break the Dark Chocolate into the small bowl and turn the heat on the stove to medium until melted. Remove from heat and mix with a spoon.
8. Using a dessert spoon take scoops of melted Dark Chocolate and drizzle over the slice until it is well covered and you have used up the chocolate.
9. Set in the fridge until completely chilled and then remove from fridge onto a large chopping board and slice with a sharp knife.
10. Store in a sealed container in the fridge or freezer.

Note

Ensuring you press the slice mixture into the tin firmly is essential for the slice to hold together.
